Olearia Schiralli – Olio Crudo Olive Oil from Puglia
At Olearia Schiralli, the olives for Olio Crudo olive oil from Puglia are gently pressed and processed into delicious, medium-fruity olive oil of the highest quality class: Olio de Oliva extra vergine. For generations, the Schiralli family has owned about 20 hectares of olive groves in southern Italy, at the foot of the Barese Murgia. This scenically attractive region, only 12 km from the sea, is characterized by semi-rocky terrain, which offers optimal conditions for olive cultivation due to prolonged and intense sun exposure and the beneficial effect of the rising wind.
Olio Crudo – Olive Oil from Coratino and Ogliarola
On the hills around the town of Bitetto, located about 15km from Bari at 135 meters above sea level, grow about 8,000 stately olive trees of Olearia Schiralli in the red soil of Puglia. The olive groves are carefully tended by the Schiralli family throughout the year, so that in autumn the partly green, partly already black olives can be shaken from the trees and oils with a high polyphenol content can be pressed from them.
Olearia Schiralli, or the Schiralli brothers, market their extra virgin olive oil from typical Puglian olive varieties under the brand Olio Crudo - which means "raw" and hints at the completely innovative processing technique, which is the result of many years of experience of the manufacturer of extraction machines, the Tuscan company Mori. Both Crudo and Sei Cinque Zero are monocultivar olive oils, obtained from a single olive variety - Ogliarola for Crudo and Coratina for Sei Cinque Zero. The Culto olive oil from Olio Crudo is produced from a blend of various Puglian varieties.
