Macelleria Falorni – Salami from Greve, Tuscany
The name Macelleria Falorni is known among lovers of Italian salami for the best salami from Greve in Tuscany. For over 200 years, the Falorni family has been producing high-quality salami in Greve, in the heart of the Chianti region. Their shop, Macelleria Falorni, is still located in the center of town on the central Piazza, under the old arcades. The ceiling there is full of hams, and the aroma is incredible. Macelleria Falorni – The Finest Italian Salami
The breeds Suini Grigi, Bianco della Val di Greve, Cinta Senese, and wild boars from the region are processed by Falorni. They come from Tuscany and Manuta, weigh 160kg to 170kg, and are at least 10 months old. The Cinta Senese pigs, an ancient Tuscan saddleback breed, undergo two acorn fattening periods. This makes the meat particularly aromatic and nutty. Falorni was the first butcher shop in Tuscany to produce wild boar salami. Wild boars have only been in the area for 40 years. The salami impresses with its clear meaty taste and its special seasoning. Of course, Falorni also likes to season the salami with Chianti Classico and Tuscan fennel.
